Hildegard of Bingen, the medieval polymath, healer and saint, recommended a morning cup of thyme tea to “enliven spirits and overall well being.”
Traditional healers have historically prized thyme for its high thymol and volatile oil content in promoting respiratory wellness.
We hand-harvest our thyme in June when the plant’s antioxidant phenols are at their peak. Immediately after harvest, the wild herbs are rushed to a temperature-controlled air dryer located in an alpine village chosen for its pristine, oxygenated breezes. Our thyme undergoes a quick drying process under a special protocol.
